Egg prices are in the news and a frequent source of conversation with my friends right now. I have chickens who seem to have gone on strike. I had to buy eggs the other day and it was $7.80 for 18 eggs. I told my girls they better get back to work but alas… their production is way down.

Egg production does drop in the winter months. This is partially due to temperatures being lower and fewer hours of sunlight. I could put a light on in their coop to extend the number of hours they have light but having some slowdown allows their bodies to rest a bit. I understand that. Everything has a season in nature, an ebb and flow to things. You see it in the garden through the seasons and the chickens are no different. Their production will increase as we move into spring in a few months.

In lieu of discussing the possible why’s of egg prices, I wanted to pose a different tangent: egg alternatives. My youngest had an egg allergy for the first several years of his life so we had to think outside of the shell with our recipes. Fortunately there are several memes going around social media that list options for egg alternatives in recipes. We found applesauce was a good alternative for baking. It was easy to use and readily available.

Fortunately, the internet has made egg free recipes widely available through quick searches. One of my favorite egg free recipes is a banana nut cinnamon roll. What new favorite recipes will you discover by trying traditional recipes but swapping out the egg for an alternative?
